Entry # 1 - Pecan Tassie by Neelima

Ingredients:
For dough:
1 stick butter
3 ounces cream cheese
1 cup flour

For filling:
2 eggs
1/4 teaspoon salt
2 tablespoons melted butter
1 teaspoon vanilla
1 1/2 cups brown sugar
1 cup broken pieces of pecan

For decoration:
20-25 pecan halves

Preparation:
1. Mix cream cheese and butter together. Mix in flour. Chill the dough in the refrigerator for an hour.
2. Mix together the ingredients for filling.
3. Divide into 24 balls. Press each ball into greased tart pans forming a cup.
4. Fill the tart cups with the mixture of pecan using a spoon.
5. Preheat oven to 350 degrees and bake for 30 minutes. Cool and take out cups and decorate with pecan halves.

Entry # 2 - Cake Bread by Shruthi Hebbur
INGREDIENTS:-
Maida:- 1 cup
Butter:- 1 stick ( unsalted)
2 tspn:- Baking powder
Fine Sugar:- 3/4 cup
Vanilla essence:- 2 tspns
Eggs:- 4

Method:- In one bowl add maida and baking powder and mix throughly and keep aside.

Later
1. Firstly in a bowl beat the butter throughly until it becomes smooth.
2. Add sugar and beat until the mixture becomes fluffy.
3. Add eggs one by one and beat it. It starts curdling. Beat for atleast 10 mins.
4.Add the above said maida mixture in to it . mix properly until it becomes completed incorporated.
5.Add vanilla essence finally.You cake batter is ready.
6.Preheat the oven for 350 degrees
7. pour the batter in a cake pan. Apply butter or butter spray to the pan before pouring the batter mixture
8. Place the pan in center of the oven
9. Bake it for about 45-50 mins
10. Remove after 50 mins and keep it aside for 10 mins.
11. Cut it in to thin slices or large pieces of cake as desirable.


Entry # 3 - Black Forest Cake - By Shubha Ravikoti
Ingredients:
Devil's food cake mix - 1 packet
Eggs - 3 As on the packet (i used just 2 eggs)
Vegetable oil - as on packet
Water - as on packet
Lite cherry pie filling
Whipped cream - 8 oz (1 tub) Buy the cream in tub not the bottle one.
Maraschino cherries with stem - 7-8

Method :
Mix the devil's food cake mix according to the package instructions. Grease or line the cake pan ( i used 2 seperate foil cake pans here so that i dont need to cut the cake myself for the centre filling of the cream. You may use one single big cake pan and later cut the cake in 2 layers after it cools.)

I used two 8' Round cake pans so it took around 45-40 minutes for the cake to be completely done. Cool both the cakes nicely before ur ready to ice. I would suggest leaving it on a cooling rack for 2 hrs or so... But if ur in a hurry like me, u can even put it in the fridge (not freezer) for an hour or so.:)

Once the cake is completely cool, scrub the sides and the bottom of the cake using a tissue paper. Also along side cut the hard edges of the cake. Remove the dome of both the layers. U want ur cake to be flat and evenly shaped on both sides. Dont throw the dome..we will be using it for decoration.

Open the cherry pie filling and reserve the juice seperately. Soak both the layers of the cake in the cherry juice filling juice. This is optional, but this enhances the flavour of the cake and makes it moist to taste.

Place one layer of the cake on a cake board or on any plate where u r gonna serve the cake. Pipe a dam of whipped cream on the ri of the cake so that the cherry filling doesnt not escape to the outer surface. Now fill the portion within the dam evenly with cherry pie filling. Place the second layer on top of the cake.

Now cover the cake completely and evenly using the whipped cream. Once the cake is smoothly covered, lightly crush the soft pieces of the cake that we removed from the dome and stick them to the sides of the cake. See that u use the soft pieces and not the hard ones. Once this is done... keep ur cake inside the fridge for 20 minutes or so for the frosting to set.

Now remove the cake and start decorating as u desire. I piped some whipped cream on stop on the cake..(making swirls ) and put a maraschino cherry on top of decoration. I also grated some 60%cocoa chocolate bar and sprinkled it on top of the cake.... using a biscuit cutter to shape it into a heart shape.:)..

The cake is ready to be served.. and enjoyed !

This is my first attempt at a frosted cake.. and as I love black forest cake... I am happy the way it turned out..:)

Entry # 4 - Black Forest Cake by Kavya Naimish
Ingridents: ---->Sponge Cake<----
Eggs:6 no
All Purpose Flour:1 cup
Chocolate powder:1/2 cup
Powdered Sugar:1.5 cup
Baking Powder:1/2 spn
Butter:2 tbsp

Procedure:
1.First and foremost thing to make sponge cake is to separate the egg white n yellow parts. 2.Now whisk the white using the electric whisk or hand whisk till it turns into a smooth foam. 3.Beat the yolks for 5 mins and now add the powdered sugar,butter and baking powder and mix well.
4.Take a bowl and add all purpose flour,chocolate powder and mix till they mix up well.
5.Now add the egg yolk mixture and all purpose flour mixture to the whisked egg whites and mix them all. (Dont mix them for long time as this causes the mixture to loose aeration which makes the cakes hard)
6.Heat the oven at 375 degrees for 10 mins.
7.Grease a non stick baking tray and place a parchment paper and then pour the cake mixture in to this and let it settle down.
8.Now put this baking tray into the heated oven and bake it for 20 to 25 mins.
9.Pierce a tooth pick or fork in the middle of the cake and see if the tooth pick comes out without sticking,if it happens then u can know that the cake is done.
10.When done remove it from oven and let it cool down for 15 to 20mins and then toss it on to a plate and remove the parchment paper.
11.Hot n freshly baked chocolate sponge cake it ready.

Ingridents: ---->Icing n Decoration<----
Whipping Cream:350 ml
Powdered sugar:3/4 cup
Oreo Biscuits:4 no
Cherries:8-10 no
Ghirardelli 60% cacao(chocolate):4 pieces
Sugar Water:1/2 cup(mix 10 spns of sugar in 1/2 cup of water)

Procedure:
1.Take whipping cream into a bowl add half quantity of powdered sugar and whip it using a whisk.
2.When half done add the ramaining powdered sugar and whip it into a good consistency icing.
3.Remove the edges of cake,make it into 2 halves(vertically)
4.Now sprinkle the sugar water on both the halves this makes the cake remain juicy.
5.Grate the 4 pieces of Ghirardelli choclate into think flakes.
6.Spread the icing on one half and sprinkle the grated chocoalte flakes on top.
7.Now place the second layer and cover the entire cake with icing.make sure that the cake is completely n evenly covered on all sides.
8.Once the icing is done put the grated chocolate falkes to all the sides of cake and on top too.Now its your call..you can decorate the cake the way u want.
9.I made this for my choice.Sprinkled the chocolate flakes all over the top and sides.
10.Made the oreo biscuits into small triangles and placed them on sides of the cake and decorated with cherries.

Put the finished cake in fridge for an hour and then njoy the taste of freshly home made Black Forest Cake with your loved ones.

Entry # 5 - Fruit Cake by Rajani Ravi

Ingredients:
-----------
Plain flour-2cups
sugar-1cup(1/2 cup less,since it is a fruit cake)
butter-1 stick
eggs-3
milk-3/4cup
baking pdr-2tsp
salt-1/4tsp
vanilla essence-1/2tsp
too ti fruity-1cup.
P.S-for every egg I have replaced 1/3 cup apple sauce.
Recipe of apple sauce:
---------------------
Take a medium size apple ,remove skin and seeds.
Cut into small pieces and cook it in 4 oz apple juice.
(I used motts)after it is completely done sieve it and use it,
no need to add sugar.
Recipe of cake :
---------------
Sieve flour,baking powder and salt and keep it aside.
Blend butter,apple sauce,milk then add sugar and mix till it is dissolved completely.
Then add dry ingredients and mix along with vanilla.
Finally add fruits and just fold in,don't over mix it.
Grease 13by9 baking pan and pour the batter and bake in 350F oven until a toothpick comes out clean.
As the cake itself is on a sweeter side, I didn't want to add frosting. Before serving I have just put some whipped cream and decorated with some too ti fruity and coloured sugar.
